one of the challenges of finding a successful dough recipe is finding an ingredient that simultaneously binds everyone together and allows you to make a smooth dough, not a dry bunch of lumps. For those who are not losing weight, Hearty protein bread will add protein to the diet and diversify the diet.

Ingredients 

  • 40 g chopped pumpkin seeds
  • 40 g sunflower seeds
  • 20 g sesame seeds
  • 100 g sweet lupine flour
  • 100 g ground almonds
  •  70 g coconut flour
  •  50 g of crushed flax seeds
  • 30 g wholemeal spelled flour
  • 50 g of oat bran
  • 2 teaspoons of tartar baking powder
  • 1 teaspoon salt
  •  ¼ teaspoon ground coriander
  •  2 eggs
  • 250 g low-fat quark

Instructions

  1. Mix the pumpkin, sunflower seeds and sesame seeds, set aside 2 tbsp. Mix the remaining kernels with the sweet lupine flour, almonds, coconut flour, flax seeds, spelled flour, oat bran, baking powder, salt and coriander.
  2. In a large bowl, stir the eggs and quark until smooth, gradually mix in the dry ingredients and 250 ml of lukewarm water using the dough hook on the hand mixer.
  3. Line a loaf tin (approx. 25 cm) with baking paper, fill in the dough, smooth it out and score lengthways with a knife. Scatter the set aside seeds over it, press lightly, cover and let the bread soak for 30 minutes.
  4. Then place an ovenproof dish filled with water on the bottom of the oven. Bake bread in a preheated oven at 200 ° C (fan oven 180 ° C; gas: level 3) for about 10 minutes. Then reduce the temperature to 180 ° C and bake the bread for another 45 minutes. Prick a wooden skewer into the bread to try it. If no dough sticks to it, it’s done. Take the bread out of the oven and let it cool down on a wire rack for about 10 minutes, then turn it out and let it cool down completely.
